The Georgian appetizers platter is a fixed dish in Nanuchka’s menu and Happily, all vegan! The mangold salad is undoubtedly the star of the plate, and what fun it is that it’s so easy to make at home.

Materials for 10 portions:

2 kg Swiss chard
250g ground walnuts
1 1/2 teaspoons ground coriander
1 1/2 teaspoons minced garlic
1 / 2-1 chopped hot pepper
Salt

+ Cut and Dip the mangold: separate the leaves from the stems. Boil a large amount of salt water in a pot. First, blanch the stalks for 5 minutes, then add the leaves and blanch for another 2-3 minutes together. Drain, transfer to a bowl of ice water and drain again. Chop coarsely and transfer to a bowl .
+ Add the remaining ingredients to the brew Mangold, season and taste. Set aside for about an hour in the refrigerator to absorb the flavors.
+ Diversity: replace the mangold with 3 potatoes or 6 carrots, cook and diced. Season with 2-3 tablespoons of herbs mixture (cilantro, dill, basil and parsley)
